If I really could put into words my love for food then it would be ALOT of them. Ever since I can remember, I’ve always loved being in the kitchen. Having a mother who shared the same love of food, it was no surprise she always encouraged me to express that love. I won’t forget to mention she was also a caterer and had THEE best hand when it came to combining flavours in her cooking(I swear it’s not just because she’s my mom).
Coincidentally, or not, my mom is also a native of the beautiful island of St.Kitts so needless to say the flavours in our food was surreal. In case you aren’t familiar with the cuisine it’s a blend of Indian, Spanish, African and sometimes French or British tastes.
Anyway back to why this exists. As I entered adulthood and college, I noticed a change. My relationship with food was not the same. Instead of nourishing me it almost seemed like it was hurting me. All the recipes I loved and made so much just weren’t that enjoyable anymore. 5 years later, I am ‘diagnosed’ with IBS – fibre sensitivity, lactose sensitivity, gluten sensitivity- the list of can’t-eats started to get longer than the can-eat-without-keeling-over list. But I loved cooking and creating meals so much that it opened me up to a world of different flours and milks and fruits and vegetables and how differently they work with each other.
It’s like learning to cook all over again – it’s frustrating when things don’t work but exciting when a recipe comes together so perfectly. Already not an easy road, the little information that is offered about IBS and recipes that cater to this condition made it even more difficult-especially for my local Caribbean Cuisine.
This is basically a personal love project. As I go through recipes, find allergy friendly restaurants, try new products, or create new recipes I will be sharing them, here, with you. Welcome and Bon Appetit!
