Not your Grandma’s Tuna Sandwich

Naturally, I love the heat. The hotter the weather the better it is. When the temperatures outside are scorching, cool and light foods help give me the right amount of energy to continue enjoying the heat.

This is a simple recipe. Tuna sandwich. But like all food things West Indians touch, it MUST have flavour. So this recipe is best for those who are not just satisfied with a dollop of mayo mixed into the tuna.

Besides as a go-to staple for a quick, easy and delicious meal, tuna sandwiches were a must at family and birthday BBQs. Throughout the years I’ve tried my fair share, but I have to say my mom’s is always the best. Eating a tuna sandwich from her was like an adventure; every now and then she’ll get a vapse and switch up the flavour on us. The end results were always happy stomachs.

Cooking a great meal is always pleasurable, but one must enjoy the simple things in life as well.

Not your Grandma's Tuna Sandwich

Ingredients

  • 1 can solid white tuna(or your plain tuna of choice)
  • Juice of half a lemon
  • 2 tbsps finely chopped red onion
  • 1/2 scotch bonnet pepper, finely chopped.
  • 2.5 tbsps Hellman's mayonnaise
  • 2 tbsps French's yellow mustard
  • Salt to taste
  • Black pepper, to taste

Instructions

  1. MIX all ingredients in a bowl and let sit for 10 minutes prior to serving to allow flavours to soak in. Due to the scotch bonnet there will be hints of spiciness.

  2. Toast the bread of your choice, fill and voila! An awesome and easy sandwich.

Notes

After-the-fact Wisdoms:

If you add too much lemon juice is makes the mix really soppy. This can lead to wet bread while eating.

Substituting lemon juice with lime will change the flavour a bit, but not tremendously.

Variations:
Possibilities are endless when it comes to the flavours you can add to this mix.
Here are some examples:
- Use white and green parts of green onions instead of red onions
- Chopped avocado adds silky bits to your sandwich. Or slice on top along with a slice of tomato
- A fried egg on top of this is delicious too
- One can never go wrong with some cheese.
- Any pepper can be chopped and added based on your desired spiciness level.
- Hot sauce is always good too if you do not have peppers on hand
